So I stumbled across my new favorite food blog Lottie and Doof via Refinery 29. Not only did I get to read a little interview with Sophie Buhai of Vena Cava(LOVE), but I also had to try out one of the many mouth watering recipes he has posted.
Since Mr. M likes PLAIN oatmeal cookies, I thought this recipe would be perfect. I had a tin of french grey sea salt just waiting for a great recipe, which I applied a little too liberally as you can see from my photo below.
Thin and Crisp Oatmeal Cookies with Sea Salt
- 1 cup flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 14 tablespoons unsalted butter, softened, but still cool (65 degrees)
- 1 cup sugar
- 1/4 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups old fashioned rolled oats
- sea salt (I use Maldon)
I used organic butter and flour, but next time I think I'm going tinker with the recipe and use whole wheat flour, and up the brown sugar and lower the white sugar content. Despite the over abundance of salt and making them too big they were delicious and I've already had two this morning!
